Immunity in Times of Covid-19

The COVID-19 pandemic has now risen to a global health crisis across the globe. The second wave of lethal Covid-19 has challenged India’s economic, medical and public health infrastructure. Since, there is no specific drug or vaccine effective against COVID-19 infection, exploring every possible option for prevention and strategies to enhance immunity are of great importance.

As our higher authorities are struggling with imminent dangers that this virus poses to humanity, there are few key measures that we individuals can take to fight this pandemic.

1. Wash your hands frequently. (Especially if you have travelled by public transport or have been in public spaces)
2. Always wear a Mask in public. The Mask should essentially cover your nose & mouth at all times and while not wearing a mask avoiding touching your nose or mouth.

Mix Veg Curry

Ingredients

  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium sized onion, chopped finely or ½ cup finely chopped onions
  • 1 teaspoon Ginger-Garlic Paste
  • 2 medium to large tomatoes, chopped finely or 1 cup tightly packed finely chopped tomatoes
  • ½ teaspoon turmeric powder
  • ½ teaspoon kashmiri chilli powder or deghi mirch, add more for a spicy gravy
  • 2 teaspoons coriander powder (ground coriander)
  • ½ teaspoon Garam Masala Powder
  • 1 green chili, chopped finely
  • 2 cups chopped mix vegetables - cauliflower, carrots, potatoes, french beans, capsicum
  • ½ cup green peas , fresh or frozen
  • 1.5 cups water or add as required
  • salt as per taste
  • 2 tablespoons cream or malai or 3 tablespoons milk
  • 8 to 10 paneer cubes - optional
  • 3 tablespoons chopped coriander leaves

Instructions

  1. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté onions till they turn light golden.
  3. Add the ginger-garlic paste. Sauté till the raw aroma of both ginger and garlic goes away.
  4. Add the tomatoes. Keep on stirring till the tomatoes become soft and pulpy.
  5. The process of frying the tomatoes takes a little longer. If you want to quicken the process, add a pinch of salt to the onion-tomato mixture. Fry the tomatoes on a low flame as you don't want the tomatoes to get burnt.
  6. When the mixture becomes smooth and you see oil releasing from the sides, then add turmeric powder, kashmiri red chili powder, coriander powder and Nebula Care Kitchen King Masala.
  7. Mix spice powders very well with the onion-tomato mixture.
  8. Add the chopped veggies, green peas and green chilies.
  9. Add water and salt as per taste. Cover pan with a lid and let the veggies cook on a low to medium flame.
  10. Once the veggies are half cooked, add the cream or malai or milk. Stir well.
  11. Cover again with a lid and simmer the veggies till they are done.
  12. Don't forget to check the vegetables occasionally at intervals.
  13. Add more water if the water dries up and if the veggies are still to be cooked.
  14. Once the veggies are cooked and the mix veg curry is done, then switch off the flame and add 3 tablespoons chopped coriander leaves. Mix well. if using paneer, then add the paneer before you add the coriander leaves and simmer for a few seconds.
  15. You can also garnish veg curry with fried paneer cubes. Otherwise simply garnish with chopped coriander leaves.
  16. Serve mix veg hot with pooris, parathas, kulcha or chapatis.

Sambhar

Ingredients

  • For Sambhar 3/4 cup toovar (arhar) dal
  • 2 drumsticks - cut into 3” pieces
  • 1/2 cup bottle gourd cubes
  • 1/2 cup potato cubes
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 6 to 7 curry leaves (kadi patta)
  • 2 pinches of asafoetida (hing)
  • 8 small shallots (madras onions ) or 3 normal onions
  • 2 1/2 tbsp tamarind (imli) pulp
  • 3 tbsp Nebula Care sambhar
  • 2 tsp Nebula Care chilli powder
  • Pinch of Nebula Care turmeric powder
  • salt to taste
  • 2 tbsp finely chopped coriander (dhania)

Instructions

  1. To make sambhar, wash the toovar dal thoroughly and drain.
  2. Combine the washed dal and 2 cups of water in a pressure cooker and pressure cook for 3 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Blend the dal using a hand blender till it is smooth and keep aside.
  5. Combine the drumsticks, bottle gourd and potatoes with 1 cup of water in a deep non-stick pan and cook on a medium flame for 4 to 5 minutes or till the vegetables are soft. Keep aside.
  6. Heat the oil in a deep non-stick pan and add the mustard seeds, curry leaves and asafoetida and sauté on a medium flame for a few seconds.
  7. Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  8. Add the cooked bottle gourd and drumstick, shallots, tamarind pulp, cooked dal, , salt, Nebula Care sambhar masala, chilli powder, turmeric powder, salt and ¾ cup of water, mix well and bring to boil and allow to cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  9. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  10. Add the coriander, mix well and cook on a medium flame for 1 minute.
  11. Serve the sambhar hot with idlis, dosas or even rice.
